How to make these Snickers Stuffed Dates

Ingredients

Here’s what you’ll need to make these homemade snickers stuffed dates:

Medjool dates. You can sub for another variety of date but make sure they’re gooey and soft; dry, firm dates won’t work well in this recipe.

Crunchy peanut butter. We like to use crunchy natural peanut butter for added texture. You can substitute for a smooth creamy peanut butter or different nut butter of choice.

Dairy free dark chocolate. We’ve tried this recipe with 55% and 70% dark chocolate chips. Both tasted great!  You can use a chocolate bar if you don’t have chips, just chop it up into small pieces.

Coconut oil. This adds a silky, glossy texture and look to the melted chocolate. It’s optional so you can omit if you don’t have any coconut oil to hand.

Chopped crunchy peanuts. You can substitute for other chopped nuts if you prefer (hazelnuts also work well).  Toasted nuts will add the best flavour.

Coarse sea salt. We use flaky salt for decoration and added flavour for our healthy date snickers. You can omit if you don’t like a ‘salted’ element to your chocolate.

Equipment

You’ll need a sharp knife, teaspoon, small saucepan, medium bowl and fork for this easy recipe. A plate or small baking sheet covered in non-stick parchment paper will also be useful when making these vegan snickers dates.

Step-By-Step Instructions

STEP 1:  Cut the dates lengthways, around half way through so that you can remove the pit. Don’t fully cut them in half (leave them joined at the bottom).

Fill the centre of each date with peanut butter, around 1/2 tsp per date (depending on the size of your dates).

STEP 2:  Melt the chocolate in a heat proof bowl over a small saucepan of gently simmering water. Alternatively microwave the chocolate in 10-15 second increments.

Once fully melted, stir in the coconut oil until the oil has melted and the chocolate is glossy.

STEP 3:  Place one of the peanut butter filled dates in the bowl of melted chocolate and use a spoon to pour chocolate all over it to fully coat it. Scoop it up with a fork and let any excess chocolate drip off before placing the coated date on a parchment-lined baking sheet and repeating with the other dates.

STEP 4:  Sprinkle chopped peanuts and a pinch of flaky sea salt on top of each of these vegan snickers dates and then put them in the fridge for at least an hour to set the chocolate.

Success Tips

Choose soft, chewy dates. Use medjool dates for their natural caramel-like sweetness and soft texture, which makes them easy to fill and delicious to eat. Avoid dry, firm varieties of dates.

Stir the peanut butter. Make sure to stir your peanut butter well to combine any separated oil and give a smooth, even consistency. Avoid peanut butter that is particularly runny, otherwise it may run straight out of the dates when you try to fill them!

Use a fork for dipping. When coating the dates in chocolate, scoop them out with a fork and let the excess melted chocolate drip off – this should give you a thin, even layer all around.

Don’t overdo the salt. Adding a sprinkle of salt to the top of the chocolate coated dates is a wonderful addition that cuts through the sweetness. However, less is more here, especially if your peanut butter is salted. Add just a few grains of coarse sea salt to each date.

FAQs

Can I use a different nut butter?

Yes, you can use almond butter, cashew butter, or any nut butter you prefer to make these nut butter stuffed dates. Just make sure it’s thick and not too runny for easier filling.  Customise the topping with your favourite chopped nut to create your own take on healthy homemade snickers candy bars!

What’s the best way to melt the chocolate?

We like to use the ‘double boiler’ method for the best control and gentle, even melting. To use this method, bring a small saucepan of water to a gentle simmer on the hob and place the bowl of chocolate on top of the saucepan. As the steam underneath warms the bowl, the chocolate will gently melt.

Avoid the underneath of the bowl touching the simmering water when using the double boiler method, as this can heat the chocolate too quickly, which can result in it splitting.

You can also melt chocolate in a microwave-safe bowl in 10-15 second intervals.

Can I make these Healthy Snickers Dates without coconut oil?

Absolutely! The oil adds shine to the chocolate and makes it a smoother consistency, but you can omit it if you don’t have any.

Ingredients
 
 

  • 10 medjool dates (pitted)
  • 70 g crunchy peanut butter (5 tbsp (sub: smooth peanut butter or almond butter))
  • 150 g dairy free dark chocolate chips (or a dark chocolate bar broken into small pieces, gluten free if required)
  • 1 tsp coconut oil (optional *see note)
  • 5 tsp chopped peanuts (15g (sub: chopped nuts))
  • tsp coarse sea salt (optional)

Instructions
 

  • Use a sharp knife to cut into the dates lengthways. Cut to approximately half way through so that the date remains in one piece but you can get to the centre. Don’t cut the date into two separate pieces.
    Remove and discard the pit (stone) if you have not already done so.

  • Stir your peanut butter well to mix it together, even out the consistency and stir in any surface oil. You’ll need the peanut butter to be a thick but scoopable consistency.
    70 g crunchy peanut butter
  • Place a baking tray or large flat plate on the kitchen worktop and line it with parchment paper.
  • Fill the center of each date with the peanut butter. You’ll need around 1/2-3/4 tsp per date but it’ll depend on the size of your dates. Place the filled dates on the lined tray.
  • Place the chocolate chips into a heat proof bowl and set it over a small saucepan of gently simmering water (without the bottom of the bowl touching the water).
    150 g dairy free dark chocolate chips
  • Allow the chocolate to fully melt and then stir in the coconut oil until the melted chocolate is glossy.
    Note: You can use the microwave to melt the chocolate instead if you prefer. Place the chocolate chips and coconut oil in a microwave-safe bowl and microwave in 10-15 second increments. Be careful not to over-heat otherwise the chocolate can burn and/or split.
    1 tsp coconut oil
  • Place one of the filled dates in the bowl of chocolate and use a spoon to pour the melted chocolate over the top to fully coat it. Scoop it out of the bowl of melted chocolate carefully with a fork (don’t try to spear the date with the fork otherwise the filling may squidge out!).
  • Let any excess melted chocolate drip off over the bowl and then place the chocolate coated date on the lined tray.
  • Repeat with the rest of the filled dates.
  • Whilst the chocolate is still wet, sprinkle the dates with chopped peanuts and a small sprinkle of sea salt.
    Note: Go easy on the salt, especially if your peanut butter is salted, just a a few grains will be plenty (you can omit the salt altogether if you prefer).
    5 tsp chopped peanuts, 1/8 tsp coarse sea salt
  • Once all of the dates are coated in chocolate and decorated, place the tray in the fridge for around an hour until the chocolate has set firmly.
  • Once fully set, store the dates in an airtight container in the fridge and consume within 1 week.
    Leftover melted chocolate? Use it to make more snickers dates! Or make ‘chocolate bark’ by pouring the melted chocolate into a parchment lined dish and sprinkling dried fruit and nuts on top. Refrigerate until set and then break into pieces.
