Combine everything in the saucepan. Add all of the ingredients to a saucepan and stir together so the sugar and spices are evenly distributed.
100 g dried sultanas, 100 g dried currants, 50 g dried cranberries, 50 g mixed peel, 50 g dried apricots, 1 granny smith apple, zest of 1 orange, 140 ml orange juice, 100 g coconut sugar, 1.25 tsp mixed spice, 1 tsp ground cinnamon, 1 pinch nutmeg
Bring to the boil. Set the pan over a medium heat and bring everything to a gentle boil, stirring occasionally.
Simmer. Lower the heat and simmer uncovered for 7 minutes, giving the sauce time to reduce and thicken slightly.
Rest with the lid on. Take the pan off the heat, pop a lid on, and leave for 10 minutes. This is what plumps the fruit up beautifully, so don't be tempted to skip this step!
Jar it up. After 10 minutes, remove the lid and spoon the mincemeat into warm, sterilised jars. The mincemeat will thicken further as it cools.
