  1. Heat 1-2 tsp of olive oil or coconut oil in a large frying pan or cast iron skillet over medium/high heat.
  2. Add the mashed potato and press it down to make a layer around 1cm thick.
  3. Fry for around 10 minutes on the first side until golden and crisp.
  4. Use your spatula to divide the layer of mashed potato into three or four sections, then flip these over and fry for another 5 minutes on the second side.
  5. Note: Dividing the layer of mashed potato into sections makes it easier to flip. The important thing is to let the potato cook until it’s golden and crisp so if it needs another 5-10 minutes to get nice and crispy, let it carry on frying.

Tip: Serve fried mashed potato on buttered toast with a zig-zag of brown sauce. A breakfast comfort food classic that was a family favorite from my childhood!

Notes:

Cooking time can vary due to the size variation in sweet potatoes. A medium-sized sweet potato weighs approximately 130g (4.6oz); if your sweet potato is on the smaller size (<120g) opt for a slightly lower cook time and if your sweet potato is on the larger size (>150g) you may need to cook for longer to get it hot through. Always ensure the sweet potato is hot all the way through before serving.
